If baking take out of the fridge in advance so they are at room temperature before using. Left over yolks or whites can be frozen separably for using in sweet or savoury dishes. However you use them the original is still the best, there really is nothing more tasty that poached egg on thick cut toast with a twist of salt & pepper..... bliss
